ABV: 5.1% - IBU 21- FG -1.008
MALT: PILSNER, WHEAT, VIENNA, ROLLED OATS
HOPS: CASCADE, GALAXY, ECLIPSE
FERMENT: 18 degC with Pomona Ale Yeast

Brewers Notes:

Target final pH 4.3

Target low Free Amino Nitrogen (FAN) - Lower wort FAN levels stimulate more thiol release. Lower Nitrogen (FAN) levels increase beta-lyase biotransformation (i.e. thiol-releasing)

Yeast expresses beta-lyase to access amino acids bound to thiols in low FAN conditions

HIGH - 360ppm
MED - 240 ppm
LOW - 110 ppm

THIOLS

3SH - grapefruit passionfruit ——> Cascade hops early dry hop/whirlpool + late dry hop Galaxy

3SHA - passionfruit, guava ———> yeast esterification = Nottingham/Farmhouse, Pomona

Beta-citronellol ————> Cascade hops early dry hop/whirlpool + Pamona yeast, + late dry hop Motueka(?)

Target Dry Hop rate:

Best value for money is 6g/L IMO (so 18kg in 30HL batch), fyi: slight increase at 8g/L and then completely deminishing returns.
